There are two reasearch teams for each research area:

• Food Sciences research team focuses its research on the scientific-gastronomic study of food matrices and their relationship with the environment.
• The Management, Society and Culture research team focuses its research on the study of the social, political and cultural dimensions of Gastronomy, ethnohistory and food cultural landscape.
