BCC INNOVATION, the Technological Centre of the Basque Culinary Center (San Sebastian), needs to incorporate the following professional profile to its multidisciplinary and multicultural team:

Context and Main Objective of the Position

Within the world of gastronomy, he/she will be in charge of the development, coordination and execution of innovation and research projects with national and international companies and institutions throughout the gastro-food value chain, his/her main mission being:

  • To formulate innovative products and concepts for our clients.
  • Contribute to the business development of the culinary area and develop the relationship with current clients of the Centre.
  • To elaborate and coordinate deliverables of advisory/consultancy projects around gastronomy, both for companies and institutions (local or international).
  • Work on research projects on new ingredients.
  • Generate knowledge of processes for transforming raw materials into foods with high gastronomic value, through avant-garde techniques such as: fermentations, use of specialised machinery, enzymes, etc.
  • Design and optimise manufacturing processes; hot and cold lines, flow management, production planning, quality management and traceability, technical sheets and scandals for large-volume kitchens.
  • Identify, analyse and study in depth trends in gastronomy and avant-garde culinary techniques at an international level.

Requirements

● University degree, preferably in the area of gastronomy and/or food. Failing this, a qualification as a chef.

● Mastery of traditional and avant-garde culinary techniques.

● Work experience of around 5-10 years.

● Experience in preparing different types of deliverables for clients/institutions in research and/or consultancy projects.

● Scientific/technical knowledge applied to cuisine

● Ability to work as a team player and self-manager with a proactive and positive attitude

● Ability to integrate technical and culinary strengths with creativity in new product development and process design.

● Good time management and the ability to handle multiple tasks and projects at the same time is required.

● High interpersonal and writing skills (C1) in English, Spanish and Basque.

 

Experience in:

  • Experience in managing high volume 4 and 5 star hotel kitchens and/or central kitchens.
  • Dynamism to take on different roles: support tasks or leadership tasks in the different projects.
  • Creativity and proactivity are two essential values for the development of the position.
  • Versatility in the execution of projects of different nature.
  • Capacity for continuous learning.
