BCulinary signs a participation agreement with AZTI-Tecnalia

AZTI-Tecnalia has joined the Board of the Basque Culinary Center foundation (BCC) by signing a collaboration agreement for the purposes of research and technology development in the fields of gastronomic sciences, nutrition and food technology. The agreement was signed by general director of AZTI-Tecnalia, Rogelio Pozo, and the director of Basque Culinary Center, Joxe Mari Aizeaga. The Basque technology centre will contribute all its scientific knowledge in food research to this project and provide technological facilities for research projects and for BCC students' degree and doctorate projects. Resources that AZTI-Tecnalia is making available to the Foundation include a pilot plant where food processes can be reproduced on a pre-industrial scale, microstructure labs and a sensorial analysis lab, plus an experimental centre prepared to develop new culinary technologies.
