Chef para Innovación culinaria y Asesoría gastronómica

Do you want to be part of an international pioneering institution in the world of Gastronomy and its value chain? Do you like culinary innovation? BCC INNOVATION, the Technology Centre of the Basque Culinary Center (San Sebastian), needs to incorporate the following professional profile to its multidisciplinary and multicultural team: Chef for Culinary Innovation and Gastronomic Consultancy (R&D&I).

Context and Main Objective of the Position
Within the world of gastronomy, you will be in charge of the development, coordination and execution of innovation and research projects with national and international companies and institutions throughout the food value chain, being your main mission:

- Identify and analyse trends and cutting-edge techniques in gastronomy at international level.
- Generate knowledge and deliverables around these techniques to be transferred to the sector and society in general.
- To formulate innovative products for clients and research on new ingredients.
- Generate knowledge of processes for transforming raw materials into foods with high gastronomic value, through avant-garde techniques such as: fermentation, use of specialised machinery, enzymes, etc.
- Develop and coordinate deliverables of consultancy/consultancy projects related to gastronomy, both for companies and institutions (local or international).

Requirements

● University degree, preferably in the field of gastronomy and/or food.
● Mastery of traditional and avant-garde culinary techniques
● Career experience of around 5-10 years
● Experience in the elaboration of deliverables of different nature to clients/institutions in research and/or consultancy projects
● Scientific/technical knowledge applied to cuisine
● Ability to work as a team player and self-manager with a proactive and positive attitude
● Ability to integrate technical and culinary strengths with creativity in new product development and process design.
● Good time management and ability to handle multiple tasks and projects at the same time is required.
● Working languages: Spanish, English (advanced), Basque.
