Master's course in Culinary Techniques and Products

The Basque Culinary Center offers its own university qualification from MONDRAGON UNIBERTSITATEA, designed to cover a very specific training need: professional specialisation in the kitchen area.

Students look in greater depth at contemporary and traditional cookery techniques that have moved the sector forwards over the years, working with products from all over the world, 5 hours a day, 5 days a week.

An intense, 22-week classroom based course making a total of 835 teaching hours that can be completed with 6 months work experience in a prestigious restaurant. A programme that also includes Master Class seminars by international chefs, gastronomic trips and dinners in restaurants of reference.

Become a highly valued professional, capable of adapting to different styles and creating personal yet differentiating culinary work. Meet, cook and experiment with the best professionals. Every week, chefs and experts of national prestige will pass on their knowledge in each subject, including Juan Mari Arzak, Pedro Subijana, Andoni Luis Aduriz and Eneko Atxa. A teaching staff composed of lecturers of the stature of Xabier Gutierrez, head of R&D at the Arzak Laboratory, Angel Palacios, executive chef at La Broche and Luis Arrufat, head pastry chef at El Bulli for 6 years.

Adminisión y Requisitos

The master's programme is suitable for professionals with prior training and experience in the kitchen who wish to continue developing their culinary skills, refreshing and deepening their knowledge of products, culinary technique and global cooking.

Basque Culinary Center's admissions system makes sure that our students possess the right academic qualifications and personal skills to successfully deal with our innovative and demanding study plan.

An Admissions Committee, comprising professionals from the gastronomy sector, members of the Basque Culinary board and professionals with accredited experience in the kitchen, will be in charge of picking candidates.

The registration period for 2012-2013 (February-July) is already open.

Pre-registration

Any interested students should fill in the following documents and send them by email or by ordinary post:

  • The registration form
  • Curriculum vitae
  • Documents accrediting any prior training and/or experience.
  • Photocopy of identity card or passport
  • Covering Letter explaining why you are applying for the Master's Course.
  • Registration fee (returned in full if you are not admitted): 150 Euros.

Accreditation

When registering, documentation must be provided proving:

  • Training in the area of cooking and/or catering.
  • Professional experience in cooking and/or catering
  • References in the form of letters of recommendation are greatly appreciated.

It is recommended to have basic computer skills and access to the internet as online learning platforms will be used.

Interviews

All candidates meeting the access requirements will be called for interview. This phase looks for motivation and commitment to the Master's programme, plus personal aptitudes to approach this training process successfully.

The interview will take place in person or by videoconference.

The candidates will be notified concerning admission to the Master's programme within one month and, when necessary, an admissions letter will be sent for visa processes once the confirmation fee has been paid.  Help is available for foreign students regarding the application paperwork.

Programa

The programme helps students to pick up advanced skills in the following areas of knowledge:

-Learning and strengthening traditional and modern culinary techniques.

-In-depth knowledge of the products

-Development of sensory skills

-Creative and innovation skills

85% of the programme is practical.

Between training sessions, the students will carry out individual exercises and tasks and will work on their Final Project.

Evaluation will be continuous and students will have to pass periodic assessment milestones, evaluated by external professionals.

In order to promote creativity among students, gastronomic excursions will be made in each module to provide hands-on knowledge of the origin of the products, how they are handled, transformation processes, etc. and gastro dinners.

All students can request to complete their learning process with 6 months work experience at the end, in national reference restaurants forming part of the Basque Culinary Center “Restaurant Network”.  

Inside and outside the classroom, great cooking maestros will demonstrate their culinary secrets and most complex techniques.

Matriculación y Ayudas

The maximum number of students admitted will be 20. Application is open until all the places have been filled.

The total cost of the Master's programme is 9,500 €, paid as follows:

  • 150 € on application (returnable in full if not accepted)
  • 40% of the amount, 3,740€, on confirmation of admission, as a means of holding your place.
  • The outstanding amount in 6 monthly direct-debit payments of 935 €.

Financing options

Basque Culinary Center has special financing agreements with different financial entities (possibility of maximum financing over 6 years).

According to these agreements, depending on the repayment time, the average payments would be:

  • Financing over 1 year: 12 payments of 711.96 €.
  • Financing over 2 years: 24 payments of 363.53 €.
  • Financing over 3 years: 36 payments of 247.45 €.

*Quantities calculated at an interest rate of 4.25%.

Subsidy options

Eligible for a subsidy (part or all) through the Fundación Tripartita.

Housing aid During the last period classes, from the Student Information Office Faculty will provide information and support students to search for accommodation and shared flats. During the stage, in most cases the accommodation is included.
