The Basque Culinary Center Innovation Department has been founded with the aim of researching and developing gastronomic applications (concepts, techniques, preparations, etc.) and documenting and generating knowledge on topics of gastronomic interest worldwide. For this purpose, we apply scientific methodology using simple and accessible language for anyone interested in it.
Our premise is to document and publish the results of the research via different media, such as the Bculinary Lab Blog, as well as various scientific and gastronomic publications like the International Journal of Gastronomy and Food Science.
Bculinary Lab is presented as a Gastronomic Research and Development Laboratory with its own lines of work included within the framework of BCC INNOVATION -Basque Culinary Center Research and Innovation Center-.
